Copain was born from a simple but deeply felt belief: the best moments happen around the table.
Founded by Frederieke Bloem, Copain opened its doors in January 2025 on the north side of Amsterdam with a clear vision: to create a place where food, atmosphere, and storytelling come together naturally. A restaurant that feels warm and familiar, yet continues to surprise.
Evolving Throughout the Year
From the beginning, Copain has embraced change as a creative force. Throughout the year, evolving themes shape the menu, atmosphere, and visual language, moving with the seasons. Past chapters included Break & Fall in autumn and Snow Globe in winter — each offering a new perspective on the same core idea: sharing food as an experience.
Creative Space
Beyond the restaurant, Copain is a creative space where food, styling, and concept development come together. The team creates bespoke concepts for private dinners, catering, and events. Both on location and within the restaurant.
From story-driven seasonal menus to drinks pairings, tableware, and spatial design, every event is approached as a cohesive whole. In collaboration with artists, designers, and performers, Copain brings tailor-made experiences to life, handling everything from concept to execution.
Over time, leading brands such as Nike, Hermès, and Chanel have found their way to Copain, trusting the team to shape the atmosphere, styling, and food for their events.
Balancing the roles of restaurant and creative studio, Copain extends culinary storytelling beyond the table — into memorable, one-of-a-kind moments.
Chef Ivan Arauz Beusink
Born to a Nicaraguan father and Dutch mother, Ivan spent his early years in Latin America, where food was central to daily life and connection. “Meals were never just about eating — they were about being together.”
After moving to the Netherlands, Ivan was trained in some of the country’s most acclaimed kitchens. Despite his fine-dining background, Ivan’s approach remains grounded and instinctive.
“Food should always be about taste, pleasure, and creating memories together. That’s what Copain represents to me. Copain means ‘friend’ in French, and co-pain — sharing bread. It’s about food moments with the people around you.”
